  • Citrus squeezer (optional)

Ingredients
  

  • 1 cup ripe watermelon cubed
  • ½ cup raspberries fresh or thawed from frozen
  • 1 cup ripe honeydew melon cubed
  • 1 cup ripe cantaloupe melon cubed
  • ¼ cup fresh mint leaves torn by hand
  • Juice of ½ lime

Instructions
 

  • Place the watermelon, raspberries, honeydew, and cantaloupe cubes into a medium mixing bowl.
  • Add ¼ cup of fresh mint leaves, torn gently by hand to release their flavor.
  • Squeeze the juice of ½ lime over the fruit and mint.
  • Toss everything gently to combine, being careful not to bruise the fruit.
  • Chill the salad in the fridge for at least 10 minutes before serving.
  • Serve fresh for maximum refreshment and flavor.

Notes

For a twist, add a sprinkle of lime zest or a few basil leaves.
Best enjoyed fresh, but you can store leftovers in the fridge for up to 1 day.
Great served on its own or as a cooling side to a summer meal.
